Sauteed Spinach & Plantains
Components checklist:
– 48 oz of Frozen spinach (3 sachets of 16oz)
– 3.5 massive tomatoes
– 1/2 massive white onion
– 2 Tablespoons of vegetable oil
– 1 vegetable bouillon dice (Non-compulsory)
– About 2 teaspoons of onion powder
– Salt to style
Egusi Soup & Cassava Fufu
Components checklist:
– 3 cups of Floor Egusi (Melon seeds)
– 3 massive tomatoes
– 3/4 of a celery stalk
– 1/2 of a giant onion
– 9 cloves of garlic
– A small piece of ginger
– 2 cups of recent okra, chopped
– 10 oz of mushrooms – the extra the higher. I used Oyster + Shiitake mushrooms.
– 1 to 2 vegetable bouillon cubes
– Onion powder
-Cayenne pepper (non-compulsory)
– Salt
Fufu:
– 2 cups of cassava fufu flour (We purchase it on the african grocery retailer)
– 2 tablespoons of cornstarch (non-compulsory nevertheless it makes it thicker and we prefer it)
– About 6 cups of water
Methodology to prepare dinner the cassava fufu:
Pour 4 cups of chilly water to 2 cups of fufu flour in a cooking pot. Stir the flour into paste till it will get lump free. Place the pot on the range and prepare dinner for about quarter-hour. Stir constantly till the dough is easily blended. Add the remainder of the water progressively and as wanted.
Serve scorching.
Nkok & Yucca root
Components checklist:
– 5.5 Cups of Nkok leaves (additionally referred to as Okazi leaves) – about 25 oz
