I go to Jean-Jacques Dubourdieu at Chateau Doisy-Daëne in Barsac, Bordeaux. His father Denis was a well-known wine scientist and guide winemaker, and Jean-Jacques is now operating the household property. It is harvest time and the grapes for the candy wine, with their ‘noble rot’ are being picked.
