The texture is perfectly toothsome, with none of the mushy texture you might associate with a lesser cabbage cousin. This unique packet sticks to your ribs but keeps you wanting more.
Bean sprout salad, Japanese Village

Simple, crisp and refreshing, the bean sprout salad is topped with a tangy, nutty sauce. Beyond the sauce, the dish is truly a single ingredient: a generous pile of bean sprouts. The sauce is added at the point of serving, presumably to keep things fresh, but the visual of the beige plop atop the slightly greyish sprouts was a bit of a turn off.
